A Delight for Saturday Afternoon Beefcake



Extra Virgin Olive Oil
Onion, one small finely chopped
Garlic,two cloves, chopped
Arborio Rice, three and a half cups
Dry White Wine or Marsala, one cup
Broth, Chicken, brought to a boil, about one cup
Lemon zest, three, finely grated
Pecorino, three cups, finely grated
Sea Salt
Lemon for garnish
Boiling water

1. Heat olive oil in a heavy-duty large skillet over medium heat. Enough to cover it all.
2. Add onions and garlic ~ cook until softened and light golden.
3. Add rice and cook, stirring constantly, until translucent'
4. Add wine and cook, stirring constantly, until rice has absorbed most of the wine.
5. Add broth amd cook stirring constantly, until rice has absorbed it
6. Add 1 cup of the boiling water to rice, using a ladle, and cook, stirring constantly, until water has been absorbed.
7. Repeat this process 5–6 more times, until rice is al dente.
8. Add grated lemon zest and cook, stirring constantly, for 2 minutes more.
9. Remove from heat, stir in pecorino and season to taste with salt.
10. Spoon risotto onto plates and garnish with lemon slices. Serve immediately.



We're calling this marriage equality rice. Better to eat than throw. It was whipped up while watching the New York State Senate make history. It is our fond hope that someone like this young man will be waiting to zoom off to the honeymoon.
