Samhain, which is the pagan name for this time of year has evolved into what we now know as Halloween, a unofficial holiday that runs the gamut from emulating monsters and fright nights to people running around in costumes parading up and down streets and drinking themselves silly in bars. It’s the perfect excuse for men to put on dresses or gay priests to wear tutus. It is not in its origins quite all that. The Apostolic tradition usurped this pagan festival and turned into All Saints’ and All Souls’ Days. (Hallows = Holies or Saints; E’en = Eve) The late Scott Cunningham wrote quite a few books on Wicca and Paganism in his short time on the earth. And since this is the time of year to remember those who have passed on let’s recall what he had to say about it. At Samhain … say farewell to the God. This is a temporary farewell. Saturday Beefcake: More Chili, More Sandoval

We found this on About.com and need to spice up Saturday afternoon some more with more Daniel Sandoval Ingredients: •1 lb chicken, cut up into small chunks (I like to use boneless breasts for their "ease" and lower fat content) •1 cup chopped onion •1 can (or the equivalent) chicken broth •2 cloves of garlic, chopped finely •2 tsp Cumin seed (ground will not withstand long cooking as well) •1/2 tsp dried oregano leaves •3 -15oz cans white beans (great northern or cannellini), drained and rinsed •1 or 2 chopped red, green or yellow bell peppers, or combination •jalapeno chili peppers, fresh, jarred or canned, optional or 'to taste' Preparation: In a 4 or 6 quart crockery cooker combine the chicken, onions, chicken broth, garlic, cumin and oregano. Let cook awhile on low (approx. 3-5 hours, depending on your schedule) Add drained beans. Now here is the important part if you don't want mushy chili.. We are posting a an old favorite, a simple turkey chili recipe with one hot new favorite, Daniel Sandoval Navy Beans, 500 grams/one pound, cooked to tenderness, retain liquid Ground Turkey, ground, cubed or shredded 500 grams/one pound Chili Peppers, heat to taste, diced, about a half pound Chicken Bouillon, dry, three tablespoons Onions, two medium, chopped Garlic, minced, two teaspoons Cumin, whole, two tablespoons Monterey Jack Cheese, low fat, shredded Extra Virgin Olive Oil 1 Brown turkey, drain. 2. Combine in a slow cooker or a large pot, the turkey, chili peppers, bouillon, onions, garlic and cumin. Stir 3. Cover. Cook for several hours. Adjust heat and seasoning. 4. Top with shredded cheese.

We have taken some liberties with Donald Link's Chicken and Bacon hash! Ingredients: 1 medium russet potato, peeled Sea Salt 1 tablespoon olive oil 2 strips thick-sliced turkey bacon, cut into 1/2-inch cubes 1 small onion, finely chopped 1 celery stalk, finely chopped 1 garlic clove, minced 1 jalapeno pepper, stemmed, seeded, and finely chopped 1 1/2 teaspoons chopped fresh sage or thyme 1/2 teaspoon paprika 1/4 teaspoon cayenne pepper Ground black pepper 1 1/2 to 3 cups shredded cooked chicken, preferably barbecued Olive Oil 2 tablespoons to 1/4 cup chicken broth or water 1/2 bunch scallions (white and green parts), thinly sliced Flour for dusting Method: Cut the potato into a small dice and place in a small saucepan. Cover with 2 inches of water and add a generous pinch of salt. Bring the potato to a boil, reduce the heat to low and simmer until tender, 13 to 15 minutes. Drain the potato and set aside.
