Saturday Beefcake Sweets: Vincenzo



OK. If your name is Vincenzo, it stands to reason that ricotta must play an important role in your culinary life. With looks as sweet as this particular Vincenzo's, perhaps there's inspiration for a ricotta sweet thing as well.


Ricotta Cookies

Butter, unsalted, softened, one cup
Sugar, two cups
Eggs, three
Ricotta, two cups
Vanilla, two teaspoons
Flour, four cups
Baking Soda, one teaspoon
Salt, one teaspoon
Oven pre-heated 350F



Now that the heat is up.



1. Cream butter.sugar, eggs and cheese until smooth.
2. Stir in vanilla. Combine flour , baking soda and salt and beat into butter mixture.
3. Drop dough by one half teaspoonfuls onto greased cookie sheets.
4. Bake about fifteen minutes can
5. Cool on racks.



Frosting makes it all the richer and sweeter.



Icing:
Sugar, confectioner's, one box
Butter, unsalted, four tablespoons, softened
Vanilla, two teaspoons
Milk
