Beefcake Lunch: Italian Comfort


Panzanella is great Italian comfort food having its origins in Toscana. It's a warm weather bread salad, using leftover bread. Tuscan bread has no salt and the salad uses its blandness to soak up all the textures and rich flavours. The April issue of Eating Light is featuring a great version using ciabatta, presented by the fetching Jim Denevan of Outstanding in the Field. Outstanding indeed.
