Lemon Basmati Rice
[4 Servings]
• 2 cups basmati rice
• 3 cups low-sodium vegetable stock
• 1 lemon peel
• 2 cloves
• 2 bay leaves
• 1 clove garlic
• 1/2 teaspoons white pepper
1. Combine all ingredients in an 2 quart pot. Bring to a boil. Cover
pot and simmer for 30 minutes until rice is tender.

2. Remove cloves, lemon peel, bay and garlic. Serve rice warm.
