The Summer Solstice


This is a magical time of year. This is the time of year to manifest divine gracious gifts, most of which are the great people in our lives. It is magical because it is that time to shed the light on who we are. It is when we enthrone the Sun God, the symbol and the manifestation of self, in Latin, ego which also means "I".

The longest hours of daylight accentuate the virtue of loving one's self. Here comes the Sun King.


Solstice Salad

Fresh Spinach, one pound
Fres Strawberries, one pund
Walnuts, chopped, one half cup
Blue Cheese, crumbled




Dressing:

Crystallized Fructose, one half cup
Sesame Seeds, two tablespoons
Poppy Seeds, one tablespoon
Onions, minced, one and a half teaspoons
Worcestershire Sauce, one quarter teaspoon
Paprika, one quarter teaspoon
Cider Vinegar, one quarter cup
Olive Oil, one half cup




1. For the dressing mix all the ingredients except the oil in a jar and shake until fructose dissolves. Add oil. Shake again. Cool for an hour or more.
2. Strawberries and spinach, washed and with stems removed, are chopped into bite sized pieces.
3. Toss the walnuts and bleu cheese with the strawberries, spinach and the dressing.




Something light and refreshing in honour of the longest day of the year. Say welcome to the Summer.
