Saturday Beefcake: Tossing a Salad for Lunch

Strawberry season is the summer, although it seems lately that everything is in season all the time. In very early anticipation of what promises to be an eventful summer, especially for those who still get enthusiastic over the political process.

Here’s something savory employing the nutritious and low carbohydrate berry from Dr. Felder's nutritious book.

Strawberry-Spinach Salad

Spinach, fresh, six ounces, rinsed, dried, cut into small pieces
Strawberries, one cup, halved and hulled
Sesame Seeds, toasted, one tablespoon
Balsamic Vinegar, one and a half tablespoons
Green Onions, green part only, minced
Sugar, one tablespoon
Paprika, hot, generous pinch
Kosher salt and Freshly Ground Black Pepper, to taste

1. Combine spinach, strawberries, and sesame seeds in an appropriate bowl.
2. Thoroughly mix oil, vinegar, onion, sugar, paprika, salt and pepper until sugar melts.
3. Pour the dressing over the salad and toss.

Accompanying this sweet and savory recipe are pictures of the human male version of those attributes--a little something to give new meaning to tossing a salad.
