Saturday Beefcake: The Ritz




Something Italian and to the point for lunch in honour of Roundabout's recent revival of The Ritz. OK, Terrence McNally might have written the Italian characters better and with less broad strokes. The romp of a play was nevertheless very enjoyable and not without stereotypical male eye candy. Actually not a single character was painted subtly, especially the side splitting inducing Googie Gomez.





OK, Ryan Idol and Justin Clynes may not be Italian. But who wouldn't want to have them for lunch? Their presence in The Ritz was noteworthy as they were integral parts of that marvelously fleshy background canvas.

This simple recipe is meaty and creamy.

Penne al Forno

Heavy Cream, two and one quarter cups
Parmigiano-Reggiano, one and a half cups plus, grated
Penne, cooked al dente.
Prosciutto, thinly sliced and coarsely chopped
Oven Pre-Heated 375F




1. Bring cream, most of the cheese, three quarter teaspoon black pepper, and three quarter teaspoon sea salt to a boil over moderate heat. Stir occasionally. Remove from heat.
2. Toss the pasta in a casserole with the cheese mixture. Bake for fifteen minutes.
3. Stir the pasta and then sprinkle more parmigiano on top (about two tablespoons).
4. Place the pasta under the broiler about 4 inches away from flame and heat for three minutes until top is browned.
