Main Course: Stuffed


Actually, this is something appropriate for warm weather in that it is relatively light and the stuffed part has to do with the food and not the tummies of human beings.

Tuna Stuffed Avocados

Avocados, three, stuffed
Lemon Juice, freshly squeezed from one lemon
Egg, hard boiled, quartered
Tuna Fish, grilled, 250 grams
Extra Virgin Olive Oil, one tablespoon
Pickle, one small, minced
Parsley for garnish




1. Split the avocados in half. Discard the seeds.
2. Use some of the lemon juice to sprinkle over the avocado halves
3. Combine the egg, tuna, olive oil and pickle in a processor.
4. Process until smooth and season with the remaining lemon juice to taste.
5. Fill the halves with the tuna mixture and garnish with the parsley.
